This enchilada casserole was everything I was hoping for and more 😍 An awesome meal that will leave you with loads of leftovers for week day lunches. Anyone else all about a meal that saves you from having to make your partner lunch the next day!?
Enchilada Casserole
1. Ahead of time you will need to make 1 cup cooked brown rice and shredded chicken.
2. I have been using my instant pot to make shredded chicken and it’s been life changing. 20 minutes on the “meat” setting with 2 cups chicken broth and voila.
3. In a bowl, combine brown rice, shredded chicken, black beans, corn, red/green pepper, and white onion.(I prefer to sauté my red/green peppers and onions first, but you do not have to.)
4. Add 1 jar of salsa, 1 package of taco seasoning, and 1/2 cup shredded cheese.
5. Mix everything together until well combined.
6. Transfer to a greased baking dish and cover the top with shredded cheese. Cook at 375 for 25 minutes.
