Strawberry Balsamic Pork Loin
Ingredients:
For the pork:
-1 pork loin, brined (see below)
-2 tbsp melted butter or olive oil
-1 tsp salt
-1/2 tsp pepper
-1/2 tsp garlic powder
-1 tsp @daksspices steakhouse seasoning
For the sauce:
-1 cup strawberries, chopped
-1/2 cup water
-1 tbsp sweetener @swervesweetie
-3 tbsp balsamic
-optional garnish: sliced strawberries & fresh cilantro
Directions:
1. Preheat the oven to 450 degrees.
2. Pull the pork loin from the brine and pat dry. Place on a greased sheet pan.
3. Pour the melted butter or olive oil onto the pork and season with salt, pepper, garlic powder, & steakhouse seasoning.
4. Bake at 450 for 20 minutes.
5. While the pork is cooking, make the sauce.
6. Over medium heat, add the strawberries, water and sweetener to a sauce pan and bring to a boil.
7. Simmer for 10 minutes until the sauce thickens. Then add the balsamic and stir to combine.
8. Remove the pork from the oven and pour the sauce on top. Garnish with fresh sliced strawberries and cilantro.
Pork Brine:
-1 pork loin, about 2.5 lbs
-2.5 cups water
-3 tbsp salt
-1/4 cup apple cider vinegar
*combine all ingredients in a plastic baggie or shallow dish and brine overnight.
