Starting the week off with a healthy and delicious meal after a weekend full of eating out! It’s all in the sauce for this one 🤤 We usually make this with whole wheat noodles, but we tried it out with spaghetti squash tonight and it was great! This one is super easy to make too!
Shrimp Linguine:
• 1/4 cup olive oil
• 1/4 cup butter
• 2 cloves of minced garlic
• 1 cup of chopped green onions
• 1.5 pounds of peeled and deveined shrimp
• 1/4 cup lemon juice
• 2 tbsp of fresh basil
• 1 tbsp parsley
• 1 cooked spaghetti squash
1. Preheat oven to 400 degrees. Cut spaghetti squash in half. Scoop out the seeds. Drizzle the squash with olive oil, salt, and pepper. Place face down on a baking sheet. Bake for 1 hour.
2. In a large pan heat 1/4 cup olive oil and 1/4 cup butter. Add in 2 gloves of minced garlic and 1 cup of scallions. Cook until scallions are tender.
3. Add your shrimp – cooking 2-3 minutes until shrimp turns pink.
4. Add 1/4 cup fresh lemon juice, 2 tbsp of basil, and 1 tbsp parsley. Stir continuously for 1 minute.
5. Scoop out the cooked spaghetti squash. Add the “noodles” to a large bowl.
6. Add half the shrimp mixture to your cooked squash and toss. Spoon the rest of the mixture on top. Enjoy!
