📍⭐️👨🍳 Velvety Sweet Potato Soup 👨🍳⭐️📍
As the nights start to draw in, I think we are getting into proper Soup season ! My favourite. It’s the perfect batch cook on a Sunday night and makes the perfect lunches for the working week. Simple & nutritious, ideal for those with little time but want to ensure they get delicious and wholesome food 👨🍳📍
1. Heat 2tbsp of vegetable oil in a large pot on medium high heat. Add 2 white diced onion and 4 chopped carrots and stir frequently for 6-8 minutes, or until the carrots have softened slightly.
2. Add 2 chopped garlic cloves, 2 cloves of ginger, sprinkle of red pepper flakes and paprika. Stir for 2-3 minutes or until fragrant.
3. Add the diced sweet potato (around 600g) and 350ml of vegetable broth. Turn the heat to high and bring to a boil. Then reduce the heat to low, add a lid and simmer for 15-20 minutes, or until the sweet potato is fork tender.
4. Use a ladle to transfer the soup ingredients to a high-powered blender. Blend on high for one minute or until creamy. You can add more broth or water for a thinner consistency. Serve with some crusty bread 👨🍳
