📍Seasonal Pumpkin 🎃 & Thyme Soup 🥣📍
I have a delightful winter warmer for you. Low calorie & soup with such a depth of flavour 🤩✨ it’s comforting, warming and SO easy to make ✅
THE STEPS 👇
1. Place 800g of peeled pumpkin, 2 chopped white onions, 3 chopped garlic cloves, a big glug of olive oil and 700ml of vegetable stock in a pot and boil rapidly for 15 minutes until pumpkin is very tender
2. Use a stick blender or transfer to blender to blitz smooth; and add 200ml of single cream and stir well. Simmer for another 10 minutes. Next add in a handful of chopped thyme allowing to simmer. Lastly, add in a big crack of black pepper and a pinch of pink salt to taste.
3. Add in a handful of pumpkin seeds and top with some fresh croutons. Enjoy !
