BUTTERNUT SQUASH SOUP 🥣
This is one of my all time favourite soups ✨🥰 so smooth and the perfect warming bowl for this time of year 🙏🏻 also how amazing is this bowl ! It comes with its own lid & it makes the perfect lunchbox ! Genius.
THE STEPS 👇
1. Melt 50g of butter in a large pot, and cook 2 chopped white onions, add in 100g of celery and chopped carrots, and 1 large diced butternut squash for 5 minutes, or until lightly browned. Pour in enough of the 350ml of the vegetable stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 30 minutes, or until all vegetables are tender.
2. Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper and a top with a spoonful of cooling yogurt & serve with your favourite crusty bread 🤩✨ YUM!
