Shout out to @alex_stuck for our families favorite Enchiladas – made healthy! This is a go to that everyone will love!
Enchiladas:
1. In a bowl mix together 1 cup salsa and 1 can cream of chicken soup – set aside.
2. In another bowl mix 2 cups of cooked and diced chicken (I always bbq chicken the day before and use leftovers). Add 1 tbsp taco seasoning, 1/2 cup of shredded cheese, 1/4 cup greek yogurt, and 1/4 cup of your salsa mixture.
You can add any veggies to the bowl that you want at this point! I did white diced onions, diced green pepper, diced red pepper, and mushrooms. If I would of had black beans, I would of added those! I like to sauté my veggies before adding them, but you do not have to.
3. Fill the center of each tortilla and roll. Place the rolled up tortillas in a baking dish.
4. Pour the rest of your salsa mixture on top of the enchiladas. Finish with shredded cheese.
5. Bake at 350 for 25 minutes. Enjoy!!
