New 20 minute dinner recipe coming at ya! Super quick, filled with veggies, and tasted de-lish. I would say that is a win!!
Shrimp Cauliflower Fried Rice
– Heat a pan with 1 tbsp (give or take) of sesame oil.
– Add one chopped yellow onion, 1 chopped garlic clove, and 1 tbsp fresh ginger. Cook until fragrant.
– Add in 2 cups frozen vegetables. I used a bag that had peas, carrots, and corn. Cook until vegetables look warm.
– Move the veggies to one side of the pan. On the other side, pour 2 eggs and quickly scramble. Mix your cooked eggs in to the veggies.
– Add 3 cups cauliflower rice. (I also added 1.5 cups cooked brown rice. That is optional, but I like to do a mix and already had some cooked from last night.)
– Stir in 3 tbsp low sodium soy sauce and 1 tbsp sriracha.
– Turn your pan down to low and keep the rice warm.
– On a new pan, heat 2 tbsp olive oil. Add in 1 clove of minced garlic. Cook your shrimp for 3 minutes on each side.
– Top your fried rice with the shrimp and scallions. Enjoy!!
