Lazy Monday din. Asian dishes are probably my fav to make.

Soyaki chicken
Chicken marinade (1 lb):
– 1/2 tbsp: low sodium soy sauce, rice vinegar, molasses (or honey), cornstarch. Season with pepper. Set aside for at least 15 mins
Sauce:
– 1/4 cup of TJs soyaki sauce
– 1 tsp: sambal olek, Thai curry paste, rice vinegar
– *optional: few dashes of fish sauce
Over medium heat and 1 tbsp of olive oil, add 2-3 cloves of minced garlic, about 1 tsp of fresh/frozen ginger, red pepper flakes, 1 shallot, and corn(1 ear). Cook for about 3-5 mins. Add about 1 tbsp of sesame oil and chicken, stirring occasionally for about 5 mins. Add sauce, simmer on medium-low heat for another 7-10 mins until sauce thickens around chicken. Serve over rice and top with mango topping, lime, and herbs (everything can always use fresh herbs).
Mango topping:
– 1 small mango, 2-3 scallions, cilantro, jalepeno, and half a lime.
