It was a very busy Monday in our household! This one pan Cauliflower Rice Chicken Biryani from @skinnytaste did not disappoint! Made this in under 20 minutes 🙌🏼
Cauliflower Rice Chicken Biryani:
1. Cube two boneless skinless chicken breasts. Toss in a bowl. Add two gloves minced garlic, 1 tsp chopped fresh ginger, 1/2 tsp garam masala, 1/4 tsp chili powder, and 1/4 tsp tumeric. Add fresh squeezed lemon juice. Toss the chicken to coat evenly.
2. In a large skillet add 1 tsp olive oil and cook chicken through. Remove chicken and set aside.
3. Add 1 diced white onion to skillet. Cook until it becomes fragrant and golden. Add 1 chopped jalapeño, 1 can of chick peas, a bag of cauliflower rice, 1/2 tsp garam masala and 1/2 tsp of tumeric. Cook for about 6 minutes.
4. Add your chicken back in. Top with fresh cilantro and lemon juice. All ready to go!
