It is starting to warm up around here! Anyone else immediately start counting down the weeks until cottage season!? 🙋🏼♀️ Tried out a new healthy sweet treat last night and it turned out great!! These are no bake cookies that took me about a total of 6 minutes to make, no joke. Great to whip up when time is not on your side!
No Bake Cookies:
– In a pot over medium low heat add 1/3 cup coconut oil, 1/2 cup peanut butter, 1/4 cup almond milk and 1/3 cup maple syrup. Stir it all together and let it heat up until it starts to bubble.
– Once bubbling, remove from heat. Add in a splash of vanilla, pinch of sea salt, and 1/4 cup cocoa powder. Mix together.
– Stir in 1 and 1/2 cup quick oats. Mix together.
– Line a baking sheet with parchment paper. Scoop out small spoonfuls (about 1-2 tablespoons in size). Gently form in to a circle and flatten. Top with sea salt.
– Put in the fridge for a few hours to cool. All set to enjoy!!
