I wanted to try something different with salmon for a change, so I made this unique dish and wow it was fantastic! This is a must try.
(You can make it low carb by using cauliflower or low carb pasta instead)
I’m still trying to think of a good name for this. So for now I’m calling it…
CREAMY RUSTIC SALMON
Ingredients:
For the salmon:
-1 lb salmon
-1 tbsp potlatch seasoning(recipe below)
-1 tbsp olive oil
For the sauce:
-3 tbsp butter
-1 tbsp olive oil
-1/4 cup white wine vinegar
-1 tbsp lemon juice
-1 tbsp shallots, minced
-1 tsp garlic, minced
-1 tsp salt, plus more to taste
-1/2 tsp pepper, plus more to taste
-1 tsp dried oregano
-1/2 tsp dried basil
-1/2 tsp dried parsley
-3/4 cup heavy cream
-1/2 lb mushrooms, sliced
-2 cups fresh spinach
-fresh parsley & basil for garnish
Directions:
For the salmon:
1. Preheat the oven to 400 degrees. Line a sheet pan with foil and spray with oil.
2. Place the salmon, skin side down on the pan, drizzle the olive oil and sprinkle the potlatch seasoning on the salmon. Bake for 15 minutes and the remove from the oven.
For the sauce:
1. Heat a skillet over medium heat and add the olive oil, mushrooms & minced shallots.
2. Add the white wine vinegar, salt, pepper, and dried herbs. Sauté for 10 minutes or until soft.
3. Add the garlic and sauté for 2 more minutes. Next add the butter and cream.
4. Simmer the sauce for 8 minutes, stirring often then stir in the fresh spinach.
5. Cook the sauce for 5 more minutes until the spinach has wilted.
6. Remove from heat and stir in the lemon juice and fresh herbs.
7. Serve with garlic & ricotta ravioli like I did or your favorite pasta and the cooked salmon. Enjoy!
🧂Potlatch Seasoning
Ingredients:
* 1 tbsp salt
* 1/2 tsp ground pepper
* 3 tsp paprika
* 1/2 tsp crushed red pepper
* 1 tsp chili powder
* 1 tsp oregano
* 1 tsp basil
* 1/2 tsp coriander
* 1/2 tsp garlic powder
* 1/2 tsp dry mustard
Directions: mix all ingredients & sprinkle on any fish. Store in an airtight container or zip lock bag.
