This is my go to meal for an easy, healthy low fat dinner. It is the PERFECT batch cook, for those back at work with little time 👩‍💻✨& want a quick & nutritious warm-up dinner in the evening 🙌

THE RECIPE 👇
1. Dice 2 large courgettes, and 2 red peppers & one yellow and set both aside. Warm up some oil – I used the low calorie spray, and add in 2 chopped red onions & a chopped garlic cloves cook for 2 mins on a low heat until onion is translucent
2. Next add in your diced vegetables and stir well. After 5 minutes add in 2 tins of tomato & add in 150g of sliced mushrooms. Place lid of sauce pan and allow to simmer for 15 mins
3. Next add in your spices, I used a generous helping of paprika, some chilli flakes & salt and pepper
4. Cook for another 10 minutes on a low heat & then serve with fresh Greek yogurt & some grated cheese 🧀 the perfect winter warmer ! And you can warm up the rest for easy after work dinners ! Enjoy 👍✨
