Happy Thanksgiving!! 🦃🍁 I made these pumpkin muffins the other day and they were delicious. Not quite as healthy as the previous ones I made, but… it’s Thanksgiving weekend! Super simple and great for this Fall weather! 🍂🍃
Pumpkin Muffins:
• 1 and 2/3 cups flour
• 1 tsp baking soda
• 1 and 1/4 tsp cinnamon
• 1/2 tsp ginger
• 1/2 tsp nutmeg
• 2 eggs
• 3/4 cup sugar
• 1/2 cup brown sugar
• 1/2 cup vegetable oil
• 1 and 1/4 cup pumpkin pure
• 1/4 cup almond milk
1. Preheat oven to 375 degrees.
2. In a large bowl combine flour, baking soda, cinnamon, ginger and nutmeg.
3. In a separate bowl combine eggs, sugar, brown sugar, oil, pumpkin, and milk. Pour the mixture into the flour mixture. Mix gently until combined.
4. Divide batter among muffin cups. Bake for about 20 minutes.
5. Optional! Let cook and top with powder sugar. I used a sifter to sprinkle it on. Enjoy!
