Happy hump day! The countdown to the weekend is on!! Been feeling a little uninspired in the kitchen lately, but this sunshine today was exactly what I needed to get back on track. Used a couple of different recipes I have seen to create these Korean Beef and Broccoli bowls. It was super simple and took me under 20 minutes!! Not to mention, it was delicious!! Definitely reminded and tasted very similar to a bowl from Chipotle… who doesn’t love that!?
Korean Beef and Broccoli:
• 1 lb lean ground beef
• 3 cups broccoli
• 1 cup brown rice
• 2 cloves garlic
• 1 tbsp fresh grated ginger
• 1/4 cup soy sauce
• 2 tsp brown sugar
• 1 tsp sesame oil
• 2 tbsp water
• 1/4 cup chopped green onion
• Guacamole
• 1 Jalapeño
1. Chop up broccoli and add to a baking sheet. Toss in olive oil, salt, and pepper. Bake at 375 for 20 minutes.
2. Cook 1 cup brown rice. I usually do the 20 minute rice from Uncle Ben’s.
3. While your rice and broccoli cook, you can start on your beef. In a small bowl whisk together soy sauce, brown sugar, water, and sesame oil.
4. Add ground beef to frying pan. Break the meat apart with a wooden spoon as it cooks. As cooking, add in your ginger and garlic. Once cooked, add the sauce mixture to the pan. Stir until well combined.
5. Now you can assemble the bowls. Add brown rice to the base. Top with broccoli, beef, guacamole, jalapeños, and green onions.
6. You can add sesame seeds and red pepper flakes as garnish. Enjoy!!
