GREEN BEAN & COURGETTE SALAD 👩🍳

THE STEPS 👇
1. Wash 3 courgettes, and chop up into thin strips drizzle with olive oil and fry each side for 4 mins, sprinkle over sea salt.
2. Boil 150g green beans until tender and add some salt. Cover and cook, stirring occasionally, until the beans are nearly tender, about 7 to 10 minutes.
3. Meanwhile, whisk together 2tbsp olive oil, big squeeze of lemon juice, 1tbsp mustard, 2 cloves of garlic, black pepper, red pepper flakes and remaining ¼ teaspoon salt. Set aside.
4. Once the green beans are done cooking, whisk the olive oil mixture once more, pour it over courgettes and green beans. Boil 150g of garden peas and add to the mixture. Stir well.
5. Transfer the green beans & courgettes to a serving bowl or platter. Sprinkle with Wensleydale cheese and torn basil leaves on top. Add in a generous handful of cranberries. Lightly grate some lemon zest on top, and serve promptly.
