Fennel salad, so good on its own or with your fav fish
– Veggies thinly sliced: leek, Radishes, Cucumber, Shredded carrots, Beets, orange, jalapeños
Parsley mix
– 1 tbsp olive oil
– handful of parsley (finely chopped)
– Chopped pickles and capers
– Splash of the Brine
– 1/2 tsp Sugar
– 1/2 lemon juice and zest
– S&P
Vinaigrette
– 1 small shallot
– 3 tbsp olive oil
– 2 tbsp red wine vinegar
– 1 tbsp Dijon mustard
– Splash of water
– Juice from 1/2 orange
– 1 tbsp honey
– 1/2 lemon
– S&P
Mix veggies and parsley mix. Top with vinaigrette and fresh Dill.
