DELICIOUS SPICED PUMPKIN SOUP🎃
This is one of my favourite Soup Sunday’s 🥣🧑🍳 super creamy but has a little kick!
The steps 👇
1. Heat 2tbsp of oil in saucepan and cook 2 chopped white onions over medium heat for 3-4 minutes or until soft. Add garlic cube coriander, cumin and 1 chilli and cook for 1 minute longer.
2. Add 800g of pumpkin and 600ml of veggie stock to pan, bring to the boil, then reduce heat and simmer for 15-20 minutes or until pumpkin is tender.
3. Place pumpkin and cooking liquid in batches in a food processor and process until smooth.
4. Return soup to a clean saucepan, stir in 70ml creme fraiche, season to taste with black pepper and cook over a medium heat, without boiling, until heated. Enjoy 👩🍳🥣
