Couldn’t help myself…. I had to give the famous tiktok baked feta recipe a try. I gotta say, whoever came up with the idea to bake feta and tomatoes together to turn it in to a pasta sauce…. 👏🏼👏🏼. I attempted a healthy spin on mine and it didn’t disappoint. This recipe only took 15 minutes of my time and was honestly SO easy.
1. Preheat oven to 400 degrees F. Cut your spaghetti squash in half and scoop out the seeds. Drizzle the spaghetti squash with olive oil, salt, and pepper. Lay it on a baking sheet and bake for 1 hour.
2. While your spaghetti squash is baking, you can get the rest of the recipe ready. Dump two containers of cherry tomatoes in to a casserole dish. Toss with olive oil, salt, and pepper. Lay your feta in the middle of the tomatoes and drizzle with olive oil and red pepper flakes.
3. Put your tomatoes and feta in the oven and bake for 30 minutes. You can time it so it finishes at the same time as the squash.
4. While everything is baking, pan fry shrimp to add on top. Lightly coat your frying pan in olive oil. Add in two grated garlic cloves. Sear your shrimp on each side for 3 minutes.
5. You will want to scoop out your squash and add the “noodles” to each plate. For your “sauce” you will mash the tomatoes and feta together to form a sauce. It’s okay if there are a few chunks, that makes it good!!
6. Top your spaghetti squash with the sauce and shrimp. All set to serve. Enjoy!
