Check out this steak tartare I made last night. I took “Steak & Frites” to the next level! You definitely need to try this out especially with a fresh quail egg from @theabundantlifefarm

Ingredients:
-8 oz prime beef filet
-1 quail egg yolk
-1 tbsp Dijon mustard
-1 tbsp red wine vinegar
-3 tbsp EVOO
-1 tsp Worcestershire
-1 tbsp fresh chopped parsley
-2 tbsp capers, minced
-2 tbsp red onion, minced
-1 tbsp dill pickle or Cornichon, minced
-salt & pepper to taste
-optional garnish: fresh chives
-1 bag of @alexiafoods French fries
Directions:
1. Place the filet in the freeze for 30 minutes-1 hour so it’s easier to dice. Cut into fine strips then finely dice.
2. In a bowl, whisk the mustard, vinegar, Worcestershire, & evoo.
3. Stir in the capers, pickles, red onion, parsley and sprinkle salt & pepper.
4. Spoon the beef mixture into a round cookie cutter or round mold. Place in then fridge for at least 30 minutes.
*remove the mold and top with a quail egg yolk or regular egg yolk and serve with French fries. Enjoy!!
