Boursin Pesto Chicken (Inspired by the ol’ feta cheese pasta trend)
For tomato topping, roast the following for 20-25 mins at 400 degrees (broil for a couple of minutes at the end):
– Cherry or grape tomatoes
– 1/2 of Boursin cheese (I used the basil and chive one)
– 3-4 garlic cloves
– Olive oil and balsamic vinegar
– Seasoning: salt, pepper, oregano and Italian seasoning
At the same time, also bake your chicken in another dish for about 20 mins:
– 2 chicken breasts, cut horizontally to make 4 pieces
– Drizzle olive oil on both sides, season with the following: salt, pepper, oregano, Italian seasoning
– Top with a generous amount of pesto and drizzle with balsamic vinegar
When done, add lots of basil to cheese and tomato sauce, mix and spoon over chicken. Top with more basil and balsamic glaze. Serve with a side of salad, or over pasta, or both!
