Anyone else get in a rut of eating the same meals week after week? I always forget about making pork, but we love this one to mix things up! It is also, SO EASY. First meal I’m sharing that is completely made up by me 👩🏼🍳 (maybe don’t make this one 🤣)
Pork Tenderloin:
– First I make the spice mixture. In a bowl combine: 1 tbsp Italian Seasoning, 1 tsp chili powder, 1 tsp garlic powder, 1 tsp cumin, and 1/2 tsp paprika.
– Rub your pork all over with olive oil. Then cover your pork in your spice mixture. I like to rub it in so that all sides are coated evenly.
– Bake at 400 degrees for 30-35 minutes. Cover it upon taking it out and let it rest for 10 minutes before slicing.
Roasted Root Vegetable Rice:
– On a baking sheet toss peeled and thinly sliced carrots. On the other half add peeled and sliced beets. Toss in olive oil, salt, and pepper. Bake at 400 degrees for 30 minutes (or until they look roasted).
– Add your roasted veggies to 1 cup cooked brown rice. I add in lots of goat cheese and combine the mixture. It sounds weird, but is a great accompaniment for the pork!
I added roasted asparagus to our meal, but any green vegetable of your choice would work! Enjoy!!
