A busy busy day calls for a “throw it all in the crockpot and GO” kind of meal! This one isn’t the prettiest (is any crockpot meal?), but the flavors are all there 🤤 This Tuscan Chicken recipe requires minimal prep time and is all ready to go when meal time rolls around!
Crockpot Tuscan Chicken:
• 1 package of boneless/skinless chicken thighs
• 5-6 cloves garlic
• 1 cup heavy cream
• 1/3 cup chicken broth
• 3/4 cup grated parmesan cheese
• 1 tbsp Italian seasoning
• 1/2 cup sun dried tomatoes
• 1 bag/container of spinach
1. In a saucepan, heat 1 tbsp olive oil. Add in crushed garlic cloves and sauté for 1 minute.
2. Add the cream and chicken broth. Simmer for about 10 minutes. Sauce should begin to thicken.
3. In the meantime, place chicken thighs in crock pot. Season chicken with Italian seasoning, salt, and pepper. Top with chopped sun dried tomatoes.
4. When the cream is ready, lower the heat and whisk is parmesan. Do this little by little and keep whisking. This will make it smooth rather then clumpy.
5. Pour cream sauce evenly over chicken thighs.
6. Cook on high for 4 hours or low for 8 hours.
7. When ready to eat, remove chicken thighs. Add in spinach and stir until wilted. Add chicken thighs back to crockpot. (The chicken should fall apart during this process and that is okay!)
8. Serve over brown rice, cauliflower rice, noodles, you name it! Enjoy!
