After a brief hiatus, we’re back!! Here’s a yummy Cajun chicken pasta for your weeknight dinner plans!
Cajun chicken pasta
marinate 1 pound of chicken thighs with the following:
– 2 tsp of Cajun
– 1tsp of salt
– 1 tsp of smoked paprika
– 1/2 tsp of cumin
– 1 tsp of corn starch
While chicken is marinating, sauté 1 bell pepper and mushrooms until soft, about 5 minutes. Salt and pepper and set aside.
Cook pasta according to instructions. Sauté chicken over olive oil until browned and cooked through. Set aside with veggies.
Simmer raos tomato sauce. Add 1-2 tsp of Cajun seasoning. Simmer for 7-10 mins. Add half and half until desired creaminess. Combine everything and top with fresh herbs, I used chives, squeeze of lemon juice and serve!
