Anyone else have those weeks that you think will be easy peasy and two days in…it is utter insanity!? 🙋🏼♀️
Thank goodness for 1 sheet pan meals! Sheet pan fajitas are always my go to on crazy days.
Sheet Pan Fajitas:
1. Cut up your veggies of choice. We prefer red pepper, green pepper, mushrooms, red onion, slivered carrots, and cherry tomatoes. As you chop them, toss them on your sheet pan.
2. Toss all your veggies in olive oil and 3/4 a pack of Old El Paso Fajita mix.
3. Cut of two boneless skinless chicken breasts in to cubes. Add them to a bowl. Toss in the remainder of your Old El Paso seasoning and olive oil.
4. Lay the chicken evenly on top of your veggies that are on the sheet tray.
5. Bake at 350 for 25 minutes.
6. We prefer to serve ours over brown rice and make bowls (our toppings are lacking 🥴 Would normally add avocado and shredded cheese!). You can also use traditional tortillas! Enjoy!
