It’s Sunday which means it’s time to prep for the week! I love to make these pickled cucumbers to use throughout the week as a side dish or to add some crunch to an Asian protein bowl like my pulled pork. Here’s my easy recipe👇🏼
Ingredients:
* 6 mini cucumbers, sliced thin
* 2 tbsp rice vinegar
* 1 tsp sesame oil
* 1 tsp peanut oil
* 1 tbsp @swervesweetie brown sugar or regular brown sugar
* 1 tsp sea salt
* ¼ cup red onion, diced
* 1 tbsp sesame seeds
Directions:
1. Prep cucumbers then combine all ingredients except the sesame seeds.
2. Let sit in the refrigerator, tossing every 10 minutes, for 30 minutes.
3. Stir in sesame seeds and enjoy as a side dish or topped on your favorite Asian protein bowl.
