Another night….another bowl! It is definitely feeling like groundhogs day around here. Do I start another puzzle or a new book…..
Threw together what I had to whip up these Mediterranean Bowls. Super easy and not labor intensive at all. They did not disappoint!
Mediterranean Bowls:
• 2 tilapia filets
• Zucchini noodles
• Carton of cherry tomatoes
• Red onion
• 1 cup brown rice
• 1/2 cup feta
• 1/4 cup chopped olives
• 2 tbsp greek seasoning
• 2 tbsp olive oil
1. Toss zuhinni noodles, cherry tomatoes, and chopped red onion on a sheet pan. Toss in 1 tbsp olive oil and 1 tbsp greek seasoning. Bake at 350 for 30 minutes.
2. Coat tilapia in remaining olive oil and greek seasoning. Place on baking sheet. Bake at 350 for 15 minutes.
3. While everything bakes, cook your rice. Follow package instructions. I use Uncle Bens 20 minute rice.
4. Time to assemble! Start with a layer of brown rice. Add a layer of vegetables. Top with tilapia. Sprinkle olives and feta to liking. As easy as that. Enjoy!
