Not the prettiest but I promise it’s yummy.
Sun-dried tomato Salmon
Preheat oven to 375 degrees
Marinade (Blend all ingredients together)
– handful of parsley and cilantro
– 2-3 cloves of garlic, 1 shallot
– 1/4 cup olive oil, 2 tbsp balsamic vineg.
– 1/2 tsp salt. 1/2 tsp of red pepper flakes
– 1 tsp of dried dill (fresh works too)
– 1 tbsp each dijon mustard & honey
– Zest and juice of 1 lemon
– Optional- 2tbsp sun-dried tomatoes
Reserve some marinade in separate bowl. Create slits in salmon(helps soak goodness)
Season salmon & veggies (I used shredded Brussels and cranberries) w/ S&P. Let salmon sit in marinade for at least 15 mins. Then transfer to tray, spoon marinade over salmon, drizzle reserve marinade over veggies. Top salmon w/orange/lemon slices. Bake for aprox 15 mins. Remove salmon & broil veggies for 5 mins.
