Grilled Chicken kebabs
1.5 lbs of chicken, 1 red bell pepper, 1/2 red onion cut into bite sizes
In a food processor, mix the flowing:
– 3 tbsp olive oil
– 2 tbsp: sour cream or Greek yogurt
– 1 tbsp: tomato paste, honey, tahini, smoked paprika, ginger
– 1.5-2 tsp: cumin, salt
– 1/4 tsp: cinnamon
– 4-6 cloves of garlic
– 1 small shallot
– Pepper and red pepper flakes to taste
– 1 cup of herbs: I used mixture of Parsley, cilantro, and dill
– Juice of 1 lime
Marinate chicken and veggies for at least 30 mins. Assemble and grill. Top with vinaigrette and lime
Feta cheese vinaigrette:
– olive oil, red wine vinegar, feta cheese, honey, salt and pepper
